It’s officially that time of the year were we all collectively lose the ability to close the top button of our favorite jeans… And even though the holidays are cancelled different this year, it doesn’t mean we can’t still enjoy good food (and good company from a distance!). Which is why I wanted to share with you guys some amazing vegan dinner recipes. Eating vegan doesn’t have to boring and these recipes prove that. They are hearty and filling and most importantly delicious and they are perfect for the holiday season or any other night you want to cook up something special. Yummy mushrooms, wrapped up in deliciously flakey puff pastry. I mean who wouldn’t want to try this?!… This recipe is perfect for a christmas dinner or any other night you want a little something extra special.

The fact that you can actually make a vegan lasagna blows my mind! But here is one in the delicious flesh. This genius (and delicious) bit of cooking is a must try for those comfy nights in.

3. STUFFED BUTTERNUT SQUASH WITH QUINOA AND CRANBERRIES

I’m I the only person that is obsessed with butternut squash? I know its kinda a random food to be obsessed over. But I’m telling you, this fruit? vegetable is the bomb. Especially in this recipe were it is roasted and stuffed with delicious quinoa and cranberry filling. Yum!

There is something inherently comforting about pot pies (or is that me?). This vegan pot pie is filled with yummy mushrooms and the result is a delicious pie that is perfect for any christmas dinner tabletop.

There is nothing more comforting than a good hearty soup in my opinion and this mushroom, white bean and rice soup is hearty and creamy and satisfying.

A goulash is usually a stew of meat but since this is a list of vegan dinner recipes this dish is obviously a completely vegan twist on the popular dish, made with soy and other yummy vegetables. This recipe is flavorful and unique.

These stuffed sweet potatoes are not your typical christmas dinner meal. But if you’re looking to step out of the box, this recipe is delicious and a must try. The sweet potatoes are roasted and added on top is a yummy filling of black beans, tomatoes, avocado, and a hummus drizzle.
